Oil Free Brownies - My Trick - Extra Dark Chocolate

No photographs today.  But a little tip for you that might help get through those nights just HAVE to eat some copious amounts of dark chocolate but can't afford the fat and calories.

I use a box mix.  Hershey's or Duncan Hines actually.  Substitute the oil with cherries.  Buy canned cherries in juice rather than syrup.  Chop up the cherries, after straining the juice, reserving it for later.  Replace the oil exactly the same amount with the chopped cherries.  Use the reserved cherry juice for the liquid component.  I usually dump in about 4-6 Tablespoons of Hershey's Dark Cocoa and a handful of dark chocolate chunks chopped from a bar.  Under bake.  This is important.  With brownies if you over bake they are ruined.  So if it calls for 40 minutes, go 33 and check the center, sides and in between with a toothpick.  The center should be slightly gooey, while the outside cooked but not hard or dry.  The in-between should be perfect.  Pull out of the oven and cool on a rack.
