With everyone looking for inventive ways to put on a great party without spending 4 years' college tuition I found this cool option one of my brides did last year.  Food Truck Catering.  Yup.  That's right, food trucks.  I can't speak for other cities but here in New Orleans, Food Trucks are big.  It is like a rite of passage for budding chefs here.  Most will work for several of the older big time restaurants like Commander's Palace and Antoine's but they know the current executive chef isn't going anywhere soon. The only way to move up in such a competitive market is move around.  But these entrepreneurs aren't waiting.  They are buying commissary trucks and converting them to fit their style of cooking.  There are round-ups citi-wide where you can taste some of the most unique, flavorful food in the city and not break your budget.

 

Here is an example.  No, I'm not expecting you to serve pulled pork and fries at your wedding reception.  However, do yourself a favor, you need to check out chefs like P.J. Haines because these creatives do events.  Like P.J. who does catering to the movie industry, each has a talent and ability to provide more refined meals for a wedding reception.  What I show here is 14 hour smoked pork topped with habanero-serrano slaw, sweet BBQ sauce served on a brioche.  Alongside are hand-cut, duck-fat fries, dusted with rosemary-sea salt and served with a lemon aioli dipping sauce.  Not only creative but absolutely the best I've had, period.  And this was at a drunken event out of a food truck.

 

These trucks come to you or the chefs prepare the food and cater as any other caterer would do.  Just think about it.  You may have a soon-to-be-very-famous chef catering your wedding at a price that will never be available again.  Cool.  Right?!
